I am playing the King of Scotland (with the broken kingdoms mod) and I just won the Kingdom of Pomerania in a crusade. Except I didn't actually get any of the duchy or kingdom titles, just the land. The Former king still has the titles and the part of his land that wasn't de jure Pomerania. The land still abides by the crown laws of the kingdom, but I can't usurp it because it is Pagan only. He recently lowered crown authority so it might be a problem. Help please, thanks.

If you find a claimant to the Pomeranian throne you could try to push his claim and then revoke it right back for free (the claimant will be most likely pagan).
If a claimant exists who does not want to come over try the "anchor wife" trick: Marry him to a courtier of yours (who's not content). Then invite her back and he will join her. Give him a holding somewhere and your almost done ;)

If you want his title, the only way you could do that is to marry (you/your heir) with a female claimant to the pagan throne, press the female's claim (if it would not be inherited) and offer a white peace in the war (either of the other two options - claiming victory or admitting defeat - would not work), such that the claim would be passed to your heir (or your heir's heir) when the female dies. Press the claim of your heir and voila you now have the pagan crown!

If I make him a landless courtier, I'll be happy, and it'll be easier to assassinate him out of the title.

This is kind of a weak-sauce answer, but you could also just wait a century, let the country de jure drift into Scotland, and let the barbarian's descendants have fun with their (now effectively titular) kingship. Assuming they're not gobbled up by the Fatimids in the meantime, of course.

Very enlightening ... now I finally know what's the point of "needs to be pressed to be inheritable". I never even considered white-peacing out of a winnable war I have started myself.

Well, I conquered the rest of his land and he became a landless courtier, thus losing all his other titles. I knew waging war would solve my problem. It always does :)

Honestly for situations such as this, I would just use the Give Title Cheat, followed by the Cash and Piety cheats to take money and piety away from yourself

Just do: give_title k_pomerania [character id]
cash -200
piety -150

and you're all set.
