That would be quite challenging if you change the difficulty to very hard after making Granada a minor in 1492. An early war with Spain would be quite lethal.
Poland has cool unique looking troops. You could start with only Polish provinces (maybe less than all of them if you want it very hard). Then avoid reloading if possible except maybe if an event that permently "taints" a particular province occurs (like the plauge event).
