I understood that handing out bishoprics titles was beneficial for the player as opposed to just creating new vassals in newly conquered territory. What exactly is the benefit since I thought there was suppose to be some piety bonus or improved religious relations. If anyone can tell me that would be great.

You can take someone out of the succession by granting them a bishopric, and you can use it to clear out some of your useless courtiers, as far as I can determine the piety bonus for creating a random bishop and appointing a bishop are the same

So there is some bonus for doing either? In my current game I conquered several counties and revoked all infidel titles and handed out the bishoprics to my courtiers and family members thinking there was at least some bonus. I was surprised to see my piety didn't change at all.

You get a piety boon if you build new bishopries.

There is currently an issue where appointing someone as a bishop, no longer grants +25 piety as expected. It has been reported in the bug reports and I believe it was being looked at.

The creating a bishop (right click create vassal on the temple holding) still grants the +25 piety. So if you really require the piety for excommunications or other things, you can still get by doing this. But it doesn't help with wanting to get rid of family members out of succession.

There has been 1 reproduced bug reported that showed this, that I am aware of. But there could other circumstances that also cause it. Do a search on the bug reports, for crusade, if the bug is not there report it. When you report a bug like that make sure you provide how it happens. Reporting "The crusade was won, but we didn't gain any land, is this a bug?" is not helpful, issues can not be fixed if they are not reproducable.
