Half of my demesne is in the de jure kingdom of bulgaria. Having recently usurped the title of Kingdom of Bulgaria, I now have a problem: the succession type for the title is gavelkind. My own succession type is feudal elective. I can't destroy the title, and I can't afford to lose half my demesne by handing it out as a viceroyalty.

Why did you usurp the title if you didn't want to keep it? Also if you personally hold those counties you won't lose them when you hand out the kingdom as long as you remember to uncheck the box that tells it to give over the lesser titles as well. You can exploit this fact to rid yourself of excess Gavelkind titles by holding all the land under the title personally (or granting it to vassals of the same rank as the title) granting the title (now bereft of vassals/territory) to some heretic/infidel chump of a count in territory you have de jure claim to and granting them independence, then warring them for the county back leaving the title without a holder. (Or you can give them a border province and let them be a buffer state/bait to a blob.)
