Try playing the Ottomans.
You'll find that the cost of converting the provinces Turkish pretty expensive.
I think turning Turnovo Turkish was 100 (or something like that) and I only did it because a mission gave me a reward and cover 1/10th the cost. I just wanted to play with the mechanic. [I can't recall the exact number, but in my mind it wasn't worth it.]
Other than a couple provinces, the cost of converting the Balkans and Aegean is not really worth it. They're just too poor.
You'll be better off forging cores on your new territory and trying to keep up with the Europeans.
Good luck with that strategy with a country with no oversea provinces.
