Just won the kingdom of Jerusalem in a crusade, and I really need more piety, so I thought "hey, lets make that a theocracy". Granting a "temple" to a landless fella gives piety, but everything above doesn't. Didnt it use to be different? Prettly lame.

I just tested some more while I was writing this. When you give a landless man a bishopric, it says "gives +20 opinion and +25 piety". But the piety never gets added to the player's piety pool. Bug?

That does seem odd, it ought to give you piety.

In your case, why not distribute the land among the Holy Orders? That gets you buckets of piety, too, and basically achieves your goal.
