Besides the Nappy scenario linked above, you can try any of the main scenarios that come with
EU2 and start after 1492, such as Age of Enlightenment, Age of Mercantilism, etc. If you do, set an ending date other than 1820, and play the scenario as a short one with specific goals. The Age of Mercantilism, for example, can be used to play out the Thirty-Years War, if you like. End the game in 1650, which can be done in about 5 hours of good hard playing at Slow to Below Normal, plenty slow enough to manage the armies involved, without taking more than, at most, two short or one long session.
