I only started playing the EU series with EU3 In Nomine, but For The Glory seems interesting to me because quite a significant number of EU veterans praise the EU2 engine compared to the EU3 one (well at least according to 2008-2009 forum posts; don't know if their opinions changed), arguing it is way better.

Would I be too spoiled by EU3 graphics and features to enjoy FTG?

Yes and no ;-)

FtG uses a similar map to EU2 that is far less taxing on the CPU and the video card than the EU3 3D one. On my old PC for example EU 3 runs only sluggishly slow but EU2 or FtG work perfectly.

And if you choose to try the AGCEEP mod you will notice the largest difference between FtG and EU3 - historical accuracy. Not random monarchs but historical events under historical circumstances like a living experience of historical greatness of empires ^^
