England is a good country to start out as. You get some good land warfare against Scotland, and Naval Management against Ireland, and you'll have a chance to do some good colonizing as well, not to mention your safety from France and the rest of Europe as long you keep up a strong navy.

I usually recommend the following:
1st game: Castile
2nd game: another major Western European power (such as Aragon, Portugal, England, France, Denmark) - but not in HRE
3rd game: a large HRE power (Burgundy, Austria, Bavaria, Brandenburg, Bohemia, Milan, Savoy) - but not Switzerland or Hansa as republics are different

After those three, you should have a pretty decent handle on most of what the game has to offer.

Poland is easiest country in IN as long as you manage to keep Lithuania in PU with you. And to do this you need about 35k soliders(you need to have more forces than lithuania, and they tend to have at least 35k). But you can just instantly dow, the golden horde, and it will keep them from insulting you. But try to not lose their provinces, as in IN you get cores for inhertance, regardless of culture group, and it is quite hard to get PU anyway. So keep big army(you should try to get warmia and danzig cored with missions plus, annex mazovia, and you might take silesia, then just vassalize teutonic order(Might require taking some of their rather poor provinces, but you can sell some of them). And of course trade when you can, and try to make a COT in danzig.
