You can let the province revolt and wait to see:
. It may go to your vassal
. It may goe to another neighbour kingdom
. It may create a new country

If you and your vassal are the only ones who share borders with that province then you got 50% chances of succes.

Vassals get their "min" provinces (which are cores for them), but not their "extra" provinces (which are also cores). So creating them is not always a good idea. You need to check revolt.txt to see if the extra set is going to be problem or not.
