How do I edit the save game to lose papal controller status?

I tried opening the save and searching for the words "papal" and "controller" and neither popped up, so it must be a bit more complicated then that...

you need to look for this:

papacy = { control = { type = 10 id = 1128 } }

and then change the ruler's type and id to whomever's
