My best guess is that you won't be able to use that info.
In CK1 Southslavic was the only Southslavic culture. It also included Romanians and Albanians. Too much political BS (aka: copiously detailed reports in the bug report forums), and since culture has no impact on actual gameplay they punted on the issue.
But the people who do the inevitable CK2: Improvement Pack will probably be able to use it.

IIRC I saw a screenshot of the culture map mode, which showed a Croatian culture in the corner of the screen. While I can't say that means they've decided to take the risk of adding actual cultures in instead of the generic south slavic tag, it's clear there's one less group in that tag if it indeed still exists.

Map modding might be the answer, but I also think that a lot of fiefs can be designated as baronies. Like other things the map has to represent a lot of landholding and political realities. So I think that things will fit in Germany, England, France but be a bit more awkward away from the center of the map.
Modding is not the answer, especially since paradox claims CK2 to betheir most polished game ever. Stupid nonsense going on in Poland, for example, would be an equivalent of having 'London' province placed in Cornvall to set you in perspective. I could handwave such a thing if this was Medieval Total War 3, but not here.
Also, it might be even more fantasy-like elsewhere, where there's less 'Wikipedian' research - I shiver at a thought how outskirts of map would look like.

I was thinking of Iberia, where a lot of things are still kind of odd with the map, but at least the names of places are pretty much where they should be. I admit my ignorance of Polish geography, but my point was that some places might be represented by baronies rather than become full-fledged counties. I fear that there will have to be some map modding unless the development team spends some serious time working out the issues that have been raised.
Sure - I don't think that addictional provinces are needed. It would suffice to have existing ones in correct places with correct names.
What about Poland? Does it still have most of its provinces named incorrectly and placed randomly on the map?

I will give you a straight answer to the more provinces question. The answer is a no. Each province needs a holder for every single date from 1066 to 1337. This is a lot of work for the provinces we already have. I know that you do have a valid point that adding just one more province isn't that much work, but at the end of the day would you, as the community, actually agree to a single province addition and exactly what it would be? I don't think so, you'd probably just ask for another one after that. However, to show that we do actually care, what we are going to do is this. King, when it comes to adding more provinces, if the limiting factor for you guys is historical information (being Eu3 dedicated modder i know what youre talking about), why dont you guys make a, sort of contest thread, where people would come up with new provinces ideas, but only those who are also provided with information on holders (1066 to 1337) will be considered? I can bet that there will be people who will even provide you with flags (in whatever form you need for game) just to have province X included in official game.
So for example, if you have 20 people asking for one more province in Bohemia or Poland, and they provide you with province shape (maps etc), history (i bet you can find a lot more information about Polish history in Polish sources than on Wikipedia) and possibly flag, and if that new province fits into your design philosophy (size, over all number etc), then all you have to do is check data and if ok add it. In EU3 with a good map, history data and sample flag i can add a new province, country, flag, history and localization entry in about 5 minutes, assuming CK2 is anything like that, it cant take more than 10 minutes (for whatever additional mechanics you need to cover).
Id also be willing to help with this, if you need more manpower for this type of work.
