I certainly understand your reluctance to stray from the official version of EU; once you have installed the IGC, you will have to reinstall EU to get rid of it. All I can say is that this is a relatively painless process and should be worth the trouble. You could also have two or more installations of EU for the various versions.
It is unlikely that the features of the IGC will ever be incorporated in official patches. However, Paradox have used our work on leaders and monarch before, so it is not impossible.
As for Real EU, I think there is a high likelyhood of the research rates being adjusted (yet again) in future official patches, but probably not the tax vs stability rates.
