One or two province countries like Lorraine, Milan or Tuscany are fun, since you get to change history and face something of a challenge. Lorraine, with French and German culture, can let you try to re-create Charlegmagne's empire, for example. On the other hand, the events on the small country often die out at some point. So it depends what you like or are in the mood for. Never tried Morocco or Norway, but I like Denmark a lot.
If you think you want to go in India, the Timurid Empire starts out in a tough situation, poor and scattered and hated, and gives you enough events and leaders to play with. Around 1500 it gets an event that converts it to the Mughal Empire, and lets you conquer India. (Play "The Age of Exploration" campaign, which starts in 1492, if you don't fighting endlessly long wars just to defend yourself.)
I also enjoy countries like Poland and the Ottomans, that aren't truly challenging, but if you "role play" and always pick the "tough" choice on events to centralize, innovate, etc., can make for some fun challenges. Especially if you don't know when or why the events are coming--hitting one in the middle of war and driving yourself bankrupt because of your idiotic magnates or beys demanding concessions you won't give is great. Once you stop cursing at the computer, anyway.
Someone explained vanilla already--I use it to mean whatever beta I play on, but not the AGCEEP, which I also play. Which one is better depends on which country you're playing, IMHO.
