What's there to do after you've conquered half of the largest galaxy and everybody has "pathetic" fleet strength compared to you? This is like only 2280.

I don't like giving AI's buffs in paradox games. I did start the game with tons of advanced AI empires though.
What the guy above said - also, get bigger Galaxies, crank up the habitable planets and number of AI empires.
If all your enemies are pathetic, you need to play on a harder setting.

This is already the biggest galaxy. What made it so easy to conquer half of it was the updated "cheaper war demand" techs + the supremacypolicytradition. I got like 12 planets in one war, if I remember correctly.

Go get some mods chap, it'll be a different game, trust me....

This is the case in all games, it's not Stellaris-exclusive. Game AI development just isn't far long yet (with a few exceptions such as in Chess) to offer any significant opposition to players. The only way to make them harder is to give them bonuses. Yes, the AI is "cheating", because it has more resources and production than you, but you're also "cheating" - you have a human brain, the AI does not. Until you're reliably beating Insane AIs, you shouldn't claim that the game is too easy.
