I did this with cyprus in eu3 with the exception that I would own all the coast and only the coast. If it didn't have a Mediterranean port I didn't want it.
If you're looking for a new challenge, how about; own every island in the world. And if you're like me make it harder, own every island and only islands. This limits your choice of nation quite a bit too (UK, Japan, Indonesian country, minor Mediterranean country.

Congrats, I almost did this as Byzantium in my first 1.1 ironman game. Just needed languedoc in the end, although I was going for trajans empire which meant I spent time focusing on inland provinces as well.
Working on the very same goal as Tuscany right now, and I'm almost finished myself. Thought about leaving the Black Sea out though.
