I seem to have a problem which has rendered the game unplayable. Basically, everything loads perfectly fine and I get to the main menu. Yet when I actually wish to resume or start a game, it crashes once the loading bar gets to "Adapting History" every time, no matter what save or time period I'm on. Strangely, this doesn't happen in mods- as my GOT games load fine- only in vanilla. Has this been happening to anyone else?

You most likely have some corrupted files in your game install. Mods use another file or doesn't use the corrupted files at all thats why they can launch. If you use Steam use the Steam's verify integrity of game cache feature. You can find it by right clicking on Crusader Kings II on Steam's library page and then chosing properties -> local files -> verify integrity of game cache. Steam will check the files and redownload those that are faulty. This should take some time so if it claims to be finished in few seconds do it again.
Unfortunately it didn't work even after 2 tries, though I thank you for answering and trying to help me out 
If the verification didn't help there is not much to do than do a clean resinstall. Uninstall, manually delete the game folder, manually delete Crusader Kings II folder in My Documents -> Paradox Interactive and reinstall the game. If you want to keep your saves remember to move them from the Crusader Kings II folder in My Documents before you delete it. You can also do the same for your mods so you don't need to download them again.
