So I'd like to form the Kingdom of Greece. But I have no freaking idea how I'd go about this. Not sure which start date would be best, or what location. I won't be using an existing character, as I'd prefer to use Rule Designer. However, it there happens to be a character that would suite me well, I'm all ears. I've looked everywhere for tips but came up with nothing. So here I am. lol

I know it'll be tough, but I kind of want to try out this challenge, with some help. :p

I'm assuming you want to form it as your primary title. You could start as a Duke under Byzantium and slowly fabricate claims to take all the territory necessary to form it. Then it would just be finding the right time to seek independence. However, you would have to deal with all of it being de jure territory of the Byzantines, and they'll always have the upper hand due to Varangians. Another avenue is starting as the Latin Empire... which unfortunately also has the problem of an Empire tier title that can't be destroyed, but it's Catholic (can request money from the Pope) and starts with a healthy conquest stack to defend until you consolidate. There are some later dates with a disintegrated Byzantine Empire that might also be a good start, but it would be near the end of the game and you'd have to deal with incursions from Islam. Alternatively, you could choose a Duke during the Latin Empire start, though that would be difficult because of their (Latin Empire) doomstack.

if you are using ruler designer you do not need to play ironman for achievments anywas. So you ´could also start as any byzantine emperor, piss of every single vassal so they form an independence revolt, quit the game and choose any of the now independent dukes you want to finish your goal. Seems a bit gamey, but if you do not want to fight the byzantines from the inside you could just wreck them in the beginning :).
You could probably also start your custom charakter in the beginning, console flip to emperor, destroy his empire and flip back.

Would be simpler to start as emperor, revoke a Greek duchy, move cap there, give away old cap, grant all vassals independent.

Start in 1081 (or other date where Muslims control part of Greece) as a Catholic of king-tier or below, and hope the Pope calls a Crusade for Greece. Win it, and get the king title from the pope.

If you want to do this the easy way...

Start as Alexios I in 1081 (he has nearly all of Greece and little else)
Create Kingdom of Greece.
Change Byzantine succession to elective.
Lose election to a duke outside of Greece.
Immediately DoW for independance.
