I'm not sure if this is modelled in game already, but I would love to see the historical concept of forced labour of peasants, or "robot" modelled in the game. This played a huge role in impoverishing the subsistence farms as they had to spend most days of the week working the fields of their aristocratic lords. Several states worked to replace the robot with money rents or to bring the peasantry into factories which then impoverished the aristocrats and magnates as they couldn't draw from the manpower of their domains, so their fields sat empty. Not sure what the best way to model it would be, but could add some very interesting pop interactions, laws, and unintended side effects to certain actions that would be fun to experience. As far as I'm aware it was also more common in central and eastern Europe and could be a good way of modeling early productivity differences between these countries.

I really hope Production Methods for agricultural land will include different methods of land tenure with different effects that can model what you're talking about. So switching over to monetary rent makes peasants wealthier and thus faster to promote to farmers, but makes aristocrats poorer and thus less loyal.
