As mentioned in the bug report, there is no crash log created. The Windows Event Viewer shows an error in the applicaiton log:

Faulting application name: stellaris.exe, version: 1.0.0.0, time stamp: 0x61126225
Faulting module name: stellaris.exe, version: 1.0.0.0, time stamp: 0x61126225
Exception code: 0xc0000409
Fault offset: 0x00000000014b3a81
Faulting process ID: 0x3dc
Faulting application start time: 0x01d797ab6dd59512
Faulting application path: D:\Steam\steamapps\common\Stellaris\stellaris.exe
Faulting module path: D:\Steam\steamapps\common\Stellaris\stellaris.exe

After a dozen attempts, all appear to have the same code and offset.

Hello!

Thank you for the report!

Can you please double check that there are no mods enabled, and verify the game files in Steam (if not using Steam, please try reinstalling).
If the issue persists after Steam verification please try a clean reinstall, by uninstalling the game,
deleting the C:\Program Files (x86)\Steam\steamapps\common\Stellaris (for windows) folder and reinstalling the game.

I believe I've now fixed this myself.

After digging around in Windows Security, I established that the save game folder was protected by the "controlled folder access" anti ransomware / security feature. By adding both the launcher and stellaris.exe as allowed apps there the game seems to be able to save without crashing again.

I thought I'd post this in case it helps anyone else.
