The mission to finish the reconquista for Castile won't complete, even though all the objectives have been met and my war with Granada is over. Do I have to conquer all of Iberia like in eu3?

It's a mission, not an achievement.

OP, it's impossible to tell whether you have a bug or you are just missing something without more information. Post some screenshots.

those are Castile's cores to begin with.

Given the question he asked in the OP, I'd guess Granada still exists in Iberia...

Your OP is a little unspecific about what you have done so far.
Did you just conquer the provinces / annex Granada or did you properly convert the provinces to catholic afterwards as well?
To accomplish the mission, you need to convert them to catholic.
