How do you find which countries make a lot of a good? The trade screen only seems to show the top 5 producers, which usually consists of great powers, China, and the large Chinese substates. How do I find small nations producing what I want to sphere?

If you're looking for resources rather than manufactured goods, clicking the "colonization" map mode (ship icon) should show all of the provinces' resources. Finding manufactured goods is a lot harder, but if you're big enough to sphere other countries, you're probably big enough to produce your own manufactured goods, and just want the raw materials.
But it is a pain to see how much a country is actually producing. They might have a lot of provinces producing something, but if each of those only has a few hundred-thousand people, you won't be getting much stuff.
