Holland, because I love the idea of becoming a superpower as a (relatively) peaceful free-trading nation.
Brittany. Must maintain a certain balance between France, Burgundy, England and Aragon. Destroy France too quick and Burgundy becomes the new France, England Eats southwest France and Aragon eats toward Savoy.

I second this. Just started a Transoxiana>Timurid>Mughals 1453 grand campaign and I'm really enjoying it!
Muscovy! Being cornered in the start, beating the mongols and europeans, building a nation and having the bonus of being the only orthodox badass in the world.
Ottomans for the same reason: ascending from a regular minor power in Anatolia to being the only awesome sunni power (Mamlukes don't count, they cheat) and beating the hell out of Russia/Austria/Venica/Mamlukes.
Candar, for being a small nation that has to defeat the Ottomans, take their place and pillage europe.

England, because nothing is more satisfying than sinking your opponents navy in a single battle, then laughing from all my islands at the (imagined) impotency and rage on the continent.
Oman, muslim Holland/netherlands pretty much, keeping up with the europeans tech (and going past them) without Westernising makes u feel good about yourself.
Aragon is my current favorite. Good position to control the Med from the many large islands without too much continental worry. Solid position to colonize and become a trade power. Knock down Castille to form Spain and you're good to go. I'd compare it to England (w/ Normandy).
