I have only played a few different ones that I actually like, all in the first time frame.

Ireland-
Pros-Seems to be everyones recommended starting area. It is slow moving so you wont be attacked right away allowing you focus on vassal management, marriage, and plotting.

Con is it can be hard to actual conquer Ireland at first due to the slow movement eventhough it seems like an easy task.

Spain/Portual countries-
Pro-These guys are fun since due to the allies you can call them to help you and with the holy war against the islamic countires you do not need to worry about fabricating claims.

Con-The islamic countires can be hard to deal with and I dont like how all the rulers are of the same dynasty which can get a little messy.

Sweeden-
Pro-Norway can be problematic with the Scottish/English stuff going on but Sweeden can be fun. Holy wars to north

Con-The revolt that can happen at the beginning is a big pain but if you can squall that you can go north freely due to holy wars until you are big enough to take over Norway. Far away from crusade.

I also played the Russian Rostov families in multiplayer with my friend which was fun to work together due to the family allies but I dont think I would like it on my own.

My favourite is Sicily, d'Hauteville dynasty, it can be quite challanging, but if you are careful and dont get eaten by the fatmids or Greeks then you can have a really fun game and become powerful.

My second favourite would be the kingdom of Leon or Castille, Jimena dynasty, you have a good starting ruler and are in a strong position to carefully expand into Muslim territory and have many dynastic allies to either help you or attack you.

My third favourite is England, de Normandie dynasty, you have a strong ruler and can expand in a number of ways but once William dies, you have a good chance of having a terrible ruler and have to fight multiple wars of succession, independance etc, which can lead to very fun games.

D'Ivrea, Karling, Bamburghs (England), Of Cornwall, of Strathclyde and MacLochlainn. (last one is the heirs of one of the counties in Ireland in the 1066 start, I think they control the county a bit later as well, but just modded them in power in 1066 :p)

i always play as karling but looking for a new fun dynasty to play i always like restorying the roman empire so they would have to be around tht area but for some reason dnt like playing as greeks lolol i just like taking them over and restoring the empire under a different culture anyone got any ideas.

They were kings of Armenia until just before the game starts, and of both Georgia and Alania during the CK II period. Why not add the Byzantine Empire to the list?

De Forez, d'Este, and the Welfs ;) the Wettins can be entertaining as well. Sadly all four of those are HRE vassals.

The de Forez have been my ultimate favorite thus far though little two county count on the French/HRE borders. Clear shot at forming the Kingdom of Burgundy if you play things right. And well from there things can really go whichever direction you would like.
