When I have tried starting my game recently I get an error that says that the game failed to create a graphics device and that it might be because I have more than one monitor (I do). It suggested I try putting adapter=1 in the settings file, which I did, and it still does it. Any advice?

So this used to work on this machine and now doesn't? If so any hardware changes of late, like a new monitor? Try manually deleting Documents/CK2/settings.txt and /gfx/ and let the game recreate them.
Or it never worked on this machine? Please post a dxdiag.txt (you can delete everything after the "Sound devices" section for brevity) and your Documents/CK2/settings.txt. Zip up your whole Documents/CK2/logs/ directory and attach or link that here too please.
