So, we have extended timeline DLCs for CK2, but for EU4 we have only mods.

I don't like playing with mods since I play for achievements but I love the idea of a extended timeline, would be awesome to start EU4 in 800 for example.

Paradox have ever considered it for EU4?

Paradox have considered and rejected the idea, because it would lead to ahistorical outcomes too often.
Even if they did decide to do it, 800 would be waaaaay too early. You'd have conquered the world before you even reach 1444.

They already tried extending the timeline back to 1399 in EU3, the devs seem to thing it didn’t work.

CK2 better represents the world of the 9th century. And extending EU4 towards the modern era makes no sense either. Late game mechanics are both fuzzy in implementation, and rarely seen by any in the playerbase. Multiplayer games are the most likely to reach the end of the timeline, and make up a rather small percentage of total gameplay.

If you want an earlier start, get CK2 and a savefile converter. That would by far be the best modelling of the early era and you should be able to pick up CK2 at a sale for less than a new EU4 DLC cost otherwise. Extension forwards could work, but as Octavius said many players doesn't play all the way to the end. For the record, I like plaing the whole way through to 1821 - it takes me about 100 hours to do so though, so I've sometimes got multiple campaigns going simultaneously for variety. This also means that, not rarely, I'm forced to play a patch or three behind in order to finish campaigns...

If Paradox decides to do a DLC that extends the start and end dates it'll probably be the last DLC for EU4. It takes them a bit of effort to balance the different start dates for different users on future patches.

EU4 is not capable of representing the 9th century. Heck you can argue that CK2 doesn't really have the tools to represent the 10th and earlier.

I'd much prefer they keep making new games to represent different parts of human history so that each one can focus on different things.

I personally love the Extended Timeline mod. I find the length of a vanilla game very unsatisfying. I like to start in the late 1200s or early 1300s.

Sometimes starting as a small country takes a couple hundred years to get to a point where you have useful allies and can begin to obtain terrritory. In a vanilla game, 1/2 the game is already over with a start like this. At least with Extended Timelines, I still have a few hundred years to do something interesting. There may not be historical outcomes but i enjoy seeing atypical countries emerge and sometimes prosper.
