I have played Crusaders Kings and EU 3.
Now I try EU 2 ,but don't know how to behave - I want to start colonial exploits but ...well there're no explorers or conquistadors and I don't have an idea when I get them ,or how . I play the Grand Canmpaign (from 1419)

Take Portugal or Spain...but you will wait until you get first explorers. So maybe it is better to go with Ages of exploration scenario and choose Portugal or Spain. As Spain you will immediately have Cristobal Colon (Columbus) ready for voyage to "Indies" (America).

In this game you can't do anything to get an explorer or a conquistador. You either get it through a scripted event. (Only historical colonizers like Spain, England, etc can benefit from this) Or by random event. All you can do is to increase the chance of a random event by moving your innovativeness slider to the left (for conquistadors) and your land and merchantilism sliders to the left (for explorers). See the random events FAQ for more information.

Perhaps not really related to the thread in question, but can someone please tell me if the fighting skills of an explorer are the same as the ones of an admiral (suposing both got the same stats)?

I remember kicking serious ass with Cabot once, but i had homewaters and was facing a leaderless fleet so big as mine iirc.

I'm not sure and I could be wrong but I remember I read somewhere stats of conquistadors and explorers are nullified in order to avoid exploits when they are used in Europe.

No I kinda of like EU 3 more , but I would wait till 1550 on Meklenburg - very narrowminded

What you can do as Mecklenburg before 1550 is to capture the capital of colonizing countries and this will give you their maps. If you change maps through diplomacy them you won't get info about the known but uncolonized provinces.

I never played the English but I associate naval tech 4 with Cabot, at which level any little edge can unbalance the chances, so only friendly waters are enough to kick big butts. Slider setting also can do wonders at that level.

The manuever value of conquistadors and explorers is doubled when computing that stats' contribution to supply. It could be that the stat is doubled for purpose of battle as well. I can not be sure; but it seems that battle results in annihilation of enemies a lot (even for random leaders) which is the sign of higher manuever.
