There should be more options for alliances outside of the standard siblings/parents/in-laws that the game currently has. You should be able to make the standard family based alliance for your extended family even after the immediate family member dies that currently allows such alliances to be formed. So, you should still be able to create and maintain an alliance with your nephew even after your sibling/his parent dies.

Second, once a dynasty reaches a certain level of splendor, two members of the dynasty should be able to form a dynastic alliance that is inherited from generation to generation unless it is actively broken off. It should cost a decent of amount of prestige and some renown to form.

I don't know about the second part of your suggestion (mostly because I'm afraid the AI would abuse the crap out of that mechanic) but I like the first part.
I definitely would want dynastic alliances to have limits outside of the costs but I'm not sure what those should be. If cadet branches worked differently I feel like restricting the alliances to one per house and only available to the house head would be fine but I'm not sure what a good way to restrict given the way the game currently works.

I feel like extending the alliances in this way gets rid of warring with your cousin entirely. There's already very little familial wars where siblings turn on eachother, extending this lack of infighting to the second degree makes things worse rather than better.

It's not needed as a mechanic to win. If anything, this would make it easier to win.

And, currently I do and should have to worry about a powerful dynasty member having a kingdom and claims on my title, when my character heir takes over, because we have no alliance. This is one of the few things that should be dramatic and difficult, not predictable and easy.

Unless the AI has a decent numerical advantage on the player they will never declare on the player, which is to say as long as the player builds up their personal domains and maxes out their MAAs the AI is never going to attack them anyway. The main reason why I want the extended alliances to actually keep my relatives in power because they AI isn't actually good enough manage to manage their own vassals they end up overthrown or losing half of their kingdom to revolts.

If anything, this would make it easier to win.
I doubt giving the player a couple of extra alliances is actually going to make the game any easier. The only real way to make the game easier at this point would be the make the AI completely docile. Personally, once I get to a certain point I actually stop making alliances unless I absolutely what a particular marriage because they are actually a drain on my resources to help the generally incompetent-at-war AI and I don't particularly need the assistance because my armies are usually at least double that of my nearest competitor.

It's called Defensive Negotiations, and is a perk in the Diplomat Lifestyle.
There is also the power of House Head to can call to war any member of his House for no cost. And the Dynasty Head can also call to war any member of the Dynasty for 75 renown.
It is a kind of one-sided alliance.
