Grab a hold of the surprisingly decent Battlefleet Gothic: Armada, and push some space boats around. By the time Stellaris actually rolls around, you'll be tired of being an admiral and feel like you deserve that promotion to total leadership, instead letting someone else actually boss each ship around.

I suggest finding the right sort of TV show to melt the hours away. Weave a "How It's Made" marathon together with "The Joy of Painting".

I personally try to not overfill myself with sci-fi before Stellaris.
Tried to start Mazdaki Roman Horde in CK2 (because I can), but it turned out to be mostly "give us more land" and "you can't destroy this castle, but you can settle here", "Ooor you can settle as a tribe", "Just do it! Settle! I believe in you!". Meh.
I'm looking at Darkest Dungeon, but every time I have a feeling that something essential is missing and I put it away. Weird.
