Out of nowhere, this Zeyd, son of a muslim chief, conquered a random county in Scotland, became a faithfull Christian, kicked out the Vikings who had completely overrun Scotland and Northumbria, formed the Kingdom of Zeydia, went to Saxony, took his second kingdom and replaced all pagan lords with Christians, all the while Catholic Moral Authority was pracitcally 0.

And I have no idea who it is and how he did it.

He's a child of destiny. It's a special event chain where a child gets a crapload of martial bonuses, conquers a kingdom, adopts the local culture and religion, and gains a bloodline that allows launching invasions.

Interestingly his nickname is the Islamic equivalent of "Son of the Devil"...I've never really played Islamic characters, so I'm not sure how a character gets it...
According to the wiki, you get the "Son of (Blank)" epithet by either executing someone while being kinslayer and possessed, or by mutilating a prisoner. I'm guessing he did the latter.

i had a christian take iraq from the arabian empire and then go on to conquer most of the persian empire, only for me to call down the wrath of china on them.

I did this because it was set as a female bloodline but the inheritance of all the titles was agnatic.
