Well, it depends what you mean by 'very difficult'. I don't think it's possible to have a game that's difficult to play as England in the sense that you can just give up the fight for France pretty quickly and focus on exploration/colonisation when you get the chance. The AI simply can't do invasions very well so your 'home' is safe. If you don't fight for other major's colonies but just take what you can then you can have a fine and dandy (and peaceful) game for the great majority of the time.
Now, having said that, in EP, unlike in vanilla/other mods, you will not be able to dominate trade in every CoT and the other powers will colonise and trade aggressively. In EP 1.4 I was in 6th place by the early seventeenth century and could see it still being close in victory points for the remaining time period. I'm not sure how EP 1.5 plays out as I've only just started but I'm sure it will only be harder not easier.
Castille is similar as you can probably avoid Iberian wars though you will have a few land wars in Europe. France will have more wars to fight but you are one of the two military superpowers in continental Europe so I'm not sure how difficult it would be.
In addition, if like me, you can't be bothered to refine your tech research beyond roughly equal in all then you'll be behind all game (including in infra and trade) which is a lot of fun
So, in my opinion, you can have a close game without it being difficult - I hope you understand my point
