Do you like battles be bloody or less bloody?
Will battles be short like vanilla hoi or long like in WiF?
What units you would like to see?
My proposals should be:
Light Cavalry (mechanized)
Heavy Cavalry (light armor)
Knights (armor)
Why to use mechanized instead of cavalry? Because then we can make panzer leader as cavalry specialist (panzer leader gives bonus for mech and armor).
Then infantry could be:
Footmen (infantry) - quite good against everybody
Guards (motorized) - very good against everybody
Town Guard (militia) - high defense, terrible attack
Occupation troops (garrison) - low defense, good against partisans
Archers (bergsjaeger) - some kind of a defense, bonuses in rivers, hills, forests, etc.
There is already a list of units in the post #9 of this thread. Let's stick to that scheme. But I agree with your proposal to use mech infantry as Light Cavalry. It really makes sence to combine them into one group under the Cavalry Leader (Vanilla Panzer Leader). So, Vanilla Mech Infantry will be Light Cavalry and Vanilla Moto Infantry will be Dragoons.
The battles in the XVIth century didn't last long. Within a single day as a rule.
Since archers are already obsolete in that century I think we should use them as attachments (batallions).
Remember that units represent regiments not divisions. A Eurogeddon infantry regiment should require 3 units of manpower instead of 10 like a Vanilla infantry division.
But the supply consumption of units should be much higher than that in Vanilla. It's an additional limitation to avoid creating large size armies.
