How does one get to control/enter the HRE from the outside ? I see people playing france for example controlling HRE... when i vassalized an elector they would chose someone else....

Vassalize 3 electors, which is usually enough. You technically need 4, but there's generally a split vote.

Your vassal electors will generally hate you for a bit, but get their relations to 200+, and they should switch to you. If they're still voting for someone else, like the current emperor, one thing you can do is just go to war with whoever that is, as the 'recently at war' modifier should make your vassals hate whoever it is.

Vassalizing an elector just gives them a bonus 50 reasons to vote for you (and prevents other people from getting a bonus from alliance), it doesn't automatically make them vote for you. You still need to do some combination of improving relations with them, getting high prestige, legitimacy and/or diprep (and ideally have the same religion). Mouse over their shield in the imperial window to see what their reasons are to vote for someone else and fix it.

If all else fails, you can go to war with your competitor once you have enough vassal electors until a new emperor is chosen. That will give you a massive bonus and them a massive malus while the war is going on.

I recently vassalized an elector and the HRE switched said elector with someone else, this has happened many times... is it coincidence ?

This shouldn't be possible, the only way an elector can be removed is by revoking it through the CB. I'd need more information to know what happened, but unless you're running a mod this seems like a very odd bug.

How much of a difference does a few extra pips in a general really make? I fought a battle with Russia, and lost despite having superior morale, superior troops (western vs. eastern) and the numbers on my side (greatly so). Discipline was the same for both forces. The only thing in their favour was the fact that I, as attacker, had a river crossing, and their general was better (6/6/4/1 for them and 4/6/5/- for me and allies). The province where we fought was fort level two, if that makes any difference. It's not all bad rolls either, as they were getting the better of me at every round of combat.

Am I the only one who feel like I should've won here?

Good question. They were Defender of Faith or had better morale? Were you a tech level behind?

Also didn´t play Eastern countries all the way to 1820 but do they really have inferior stats at that stage?

Basically you start as Ming, then do things to tag shift to the Mughals. That let you lose the Inward Perfection modified but retain the faction system, so you'd have ridiculous things like negative coring times. Gone now, patched out.
Wasn't actually fixed. They tied Inward Perfection to having Factions instead of the Ming tag, so tag shift to Mughals does nothing for you, as you keep both Factions and Inward Perfection.

How much of a difference does a few extra pips in a general really make? I fought a battle with Russia, and lost despite having superior morale, superior troops (western vs. eastern) and the numbers on my side (greatly so).

Western troops are only slightly better, not enough to make up for the 2-pip fire advantage of the enemy general. Crossing a river is handing a 1-pip advantage to the enemy in all categories. Having more men only helps up to a point, as it looks like both sides would have two full rows of troops here.

You did maybe a bit worse than expected, but losing this battle doesn't look too surprising to me.

It's one of ideagroups events. They fire every 5 years and event is chosen randomly from all of them. The more idea groups you have the bigger event pool will get, hence it will be less likely to get the same event.

Does stationing troops in uncolonized provinces prevent the AI from colonizing them? I have a few 2k stacks standing in a few coastal provinces for some years now and none of them were touched by the AI.
