In my game as Norway i invaded Trebizond and the other province that produces naval supplies which belongs to Candar. It is a very easy way to become production leader.

Yeah, it is very easy to become the production leader. Took me quite a long time to be the trade leader as I was mercantile. I had to invade Liguria, Venezia, African and Asian ports to achieve trade leader status. That took me quite some time.
I just got the Pen Is Mightier achievement by leading Personal Unions with France and England (and Modena)!
So what's the deal with the Early Reich one. I was thinking you'd marry your way into Germany, but I forgot you're a Theocrazy. So the trick is the become papal controller and excommunicate your way through?

I recently got the Whole World Explored, Colony on Every Continent and Core in West & East Indies, having started with Austria and only gaining a coastline in 1560!
I'm giving it a try, but I suspect that I'm going to have to quit due to massive inflation. I currently (early 1500s) rule all of mainland Southeast Asia between Malaysia and China, as well as Sulawesi, Hokkaido, Taiwan, and a few colonies in the northeast. Annam, Lan Na, Tibet, and a few OPMs are vassals. Alas, my successes are unlikely to continue: I have 95 inflation! I have no clue how I'm going to beat that in the long run; my neighbors are mostly at tech level 9-10 while I'm at 5 in most categories. Furthermore, Ming has annexed hordes all the way to the Caspian and Japan has just unified and is rather aggressive. Any tips?
Wouldn't it be theoretically best to only vassal until after your west and modernize which would still leave over 100 years to use holy war in order to keep stab cost decent?

I believe so. That's what I did and I've westernized and taken over Italy, Greece and Turkey by ~1500 reaching the point where completing WC would be just a tedium. It seems that DW made WC much easier (as long as you can grow your empire to the status of super-power which became harder

Nope. But wait a minute, shouldn't I try to get the harder achievements playing on very easy then?
It'd certainly help, I doubt anyone would complain if you used Very Easy, Free Agents, No Inflation to get Three Mountains. It's still an achievement to pull it off eitherway.
It depends what you want out of the game, in my opinion. If you just want the achievement, then go ahead. Personally, I use the achievements as inspirations to my next game. I don't try to get them out of the way as fast possible.
The only achievement I've actively set out to complete was "No Pirates", the others happened as I went along.
I completed Spain is not the emperor, which was cool-beans, mostly due to my vassals ending up electors and Formal Request tanking the other would-be emperors reps is a fine example of not trying.
