I remember when I first booted up EUII. I still had EUI installed, incase I didn't like the sequal for some reason. Needless to say, I haven't touched EUI since

Same here. I actually kept it installed for a number of months, and kept a saved game that I kept meaning to finish.

Needless to say I never managed to tear myself away from EU2 until I got the HOI beta...

I've played EU1 3 times since I got EU2, the beta version.

All those sessions were MP btw.

Same thing for me, with the MP sessions. I also played EU1 a while in the beginning, because of my frustration with not being able to annex pagans and generally bad gameplay balance in the earliest patches.
