If a nation shall accept being your vassal. The nation must have the same religion as you, border your own nation, be in the same military alliance and have +190 in relations to you.
I always hate this assignments since for the first you never manage to make the country your vassal within the time limit and for the second this assignments are just boring( bad reason I know, but I just had to write it

I REALLY find them annoying and they are forcing me to make moves that I dont want to make.

I think you can change most settings every time you load a game from start-menu.
Else you can open the savegame with a text editor and change missions = yes to missions = no in the first page of the savegame.
Or you can just ignore the wear and tear on victory points, or you can choose 'make RM' mission all the time, so the AI doesn't pick a mission for you.

Check the ledger(click on the book in ur bottom left corner). Right click while in the book and choose territorial size.
I have the Swedish version of the game so I cannot follow the English names

Well, je parles un peu francais(mauvaise!), ich geförsöken spreche deutsch(I'm better when I'm drunk!), yo estudio español, jag tjötar svenska and a wee bit of english as well.
