I'm planning my next game, but before I get disappointed: is it possible to end the great schism with a catholic Byzantine Emperor? Or as Emperor of the HRE for that matter? Also: can the HREmperor restore the Roman Empire?

Only Ortodox Byzantinum can end the Great Schism AFAIK.
HRE can neither end the Great Schism nor reform the Roman Empire.

You're right, but IMHO ''completing'' the 'end the Great Schism' decision with its Catholic counterpart would be great.

It wouldn`t be as epic. The only powerful Orthodox country is the Byzantine Empire, thus the most reasonable target is Constantinople, so the conversion event would only hit the remmants of the empire you destroyed (Russia will be Mongol by this time). And you already get the Latin Empire for ending the Byzantines.

I disagree, at least for me, the current decision doesn't feel complete. The Schism was a two way split, so at least there should be two (or maybe even a third negotiated one) solutions.

You’d have to mod it in, using the mend_great_schism event in realm_decisions.txt as a template. Do any mods do this already? I’m still playing through my unmodded Komnenian Restoration game.

Really, either the Latin Empire or the Holy Roman Empire should be able to become Rome, and any Christian ruler who reconquers the Pentarchy should be able to establish his (or her) own sect as preeminent. Who could deny that God willed it?

Another crazy idea that just came to me: what if you could vassalize the Catholic Pope as bishop of Rome, the Ecumenical Patriarch as bishop of Constantinople, the Coptic Pope as bishop of Alexandria, the Monothelite patriarch as bishop of Antioch and the Nestorian patriarch as bishop of Jerusalem? Maybe it would’ve been impossible, but that would pretty clearly be a situation in which all of Christianity is back in communion, and each sect is officially tolerated, but subordinate to the secular authority.

So free investiture without annoying Pope to change it... nicely!

The main in-game effect would probably be greatly reduced false-religion penalties between Christians, and perhaps the ability to excommunicate anyone from any non-heretical sect. Heretics might convert en masse back to their parent religions. Antipopes would disappear, but all other Christian kingdoms’ and empires’ spiritual heads would become autocephalous. Maybe you could subjugate both caliphs in Mecca as your vassals, too?
