playing east india company now, enjoying it; found europa universalis 2 and 3 a little bit too involved, prefered total war medieval: any other paradox games less involved than europa, eg, east india company ? thanks

Knights of Honor, was published by Paradox Entertainment back in the day and developed by Black Sea Studios.
Definitely give that try if you like Total War, it's a casual game with a decent strategy element.
If you're looking for something modern, Stellaris is the go-to for an introduction to Grand Strategy. I also highly recommend Cities Skylines which is published by Paradox Interactive, and developed by Colossal Order, very fun, an easy to get to grips with game.

HOI 3.
Not really. If you want easy, stay out of the HOI series. But, if you want games with huge payout in playtime enjoyment once you do climb the steep cliff of the learning curve, the HOI series just keeps on giving.

For PDS games I would say Stellaris.
I think EU4/CK2/HoI4 are much of a muchness actually - I think some folks will take to CK2 better than HoI4, others will find EU4 far easier
Victoria II I would imagine being the trickiest.
Not this is just to get into - to actually "master" (whatever that means) I think may be somewhat different.
