We need a bit more critical details, namely do you have all DLCs? If not which ones do you have?

With all DLCs all things considered the newest patch is probably the easiest if you want to achieve it in a normal gameplay.

More cheesy - exploity version is 1.31 with unrestricted concentrate development (need Leviathan DLC) - this makes WC a cakewalk but also feels super gamey and broken in my opinion, but whatever floats your goat ;)

Current patch seems quite doable? The more aggressive AI means that having a strong start is a bit more important.

Strongest contenders: Austria with HRE or Mughals with unified Islam.

I did mine with Provence (formed Jerusalem -> Sardinia -> France -> Kongo -> Aksum for ideaset). Start can be a bit tricky, but you can stack up to 100% integration cost starting as Provence meaning you can basically just vasalize + integrate the world.

Another decent one would be Burgundy -> Lotharingia. Strong start. Can neuther the colonisers early and easily. Has access to permanent admin efficiency through mission tree as well as 20% CCR in ideas and an extra missionary. Conquer Pale from England at gamestart for easy access to British Isles and go from there.

If you just want an easy WC, I can recommend Qing as well. Go Humanist and you basically erase rebels from the game through your ideas, confucianism. Only hard part is winning as Jianzhou vs Ming. But that's still fairly easy. Alternatively, you can start as Korea and culture shift to Jurchen.

OF Timurids into Mughals by average player with some tips. He completed it before 1700.

If you want to do Sunni OF 1.32 or above should be best because Origins added some new monuments for missionary strength

If you can access any of the early leviathan patches, a WC would be really easy as monuments were broken, and you could endlessly use favors with various nations for gold and manpower. However the game was somewhat unstable then.

Austria HRE One Faith WC is probably the easiest.

Create a Save Scum save just prior to hitting the "Revoke" button.

Use the vassal swarm strategically and expand your border vassals as much as you can. From revoke (provided that you do so before 1600) onward it is simply a matter of willpower. Using the vassal swarm the correct way is not hard, but being efficient with it does take a bit of practice. Manually assigning provinces to each vassal is great to keep overextension under control; HOWEVER, to do so effectively requires constant pausing of the game OR moments of peace in the late game to dish out provinces to chosen vassals. In a "traditional" world conquest after about 1650 or so, you will never be at peace again until the world yours and sometimes you will have three to six wars going at once. Often to clean up some OPM island nation you completely forgot about.

End game is very tedious.

Recommended Ideas: Diplo, Religious, Offensive, Admin, Quality/Quantity, whatever you want till the end.

Second easiest is likely Sunni Mughals.

My first world conquest was actually a Sikh Mughal run, but I wouldn't recommend this for a one faith as Sikh, while awesome in many respects, is a weak converter.

Recommended Ideas: Admin, Diplo, Aristo/Offensive, Religious, Quality, [dealer's choice], Quantity.

Mughals have a quantity and quality problem that you have to resolve. Much of the starting land, and therefore your states are not wonderful manpower provinces and you don't get manpower bonuses outside of picking Quantity or Aristo. If you are going to stay Sunni Aristo is a good choice because you can correct for your bad location, far away from the institution spawns and lean into your number one strength -- mana efficiency.

Castile-> Spain and Muscovy -> Russia probably have honorable mention here, as do the Oirat. Hordes are incredibly powerful, but a very different animal from 'normal' nations.

I'm not sure this is actually beneficial. GC isn't a serious constraint unless you're making full cores, which are dubious value in WC runs to use in large number. Might be easier to run a version with stronger monuments, or maybe the patch where admin efficiency > 100% still contributed to WS cost reduction and OE reduction.
You can't get the achievement that way.
It also doesn't answer the question, since you can set the game to "easy" on any patch and the OP's question is which *patch* makes it easiest. The answer might change based on difficulty, but probably doesn't, and a suggestion to change the difficulty still doesn't answer which patch to use or whether altering the difficulty changes the patch conclusion :p.

Sure, sure, but One faith specifically is the term for the achievement, so that makes most sense. Converting the world can be done on very easy. One faith can't.

Current patch or 1.32 work fine, though 1.32 with the old combat system is a tad easier probably.
Catholic Bohemia, Austria, sunni mughals work well, though i have to mention hindu majapahit, they get acess to strong monuments, both hindu and buddhist, and can unlock the muslim trade propagation as hindu, iirc working on both muslims and christians
