I think that making certain (mainly visual) aspects of the in-game countries dynamic would add a lot of immersion, customization and fun. With these visual aspects I'm hinting at stuff like flag, country colour, visible name and adjective. Mechanical things like government, ideas, religion etc. can already be changed in-game, so why can't the visuals change alongside them? Using another tag just to change a flag and a name seems like a waste to me.
To illustrate what I mean I can give an example:
The player starts out with Italian minor X and manages to take over sufficient land to "form" Italy. At the moment, deciding to form Italy will change your tag. All that's really required is to change the colour, flag, name and some other small things (some are already implemented) to get the same effect. No need for this feature to occupy a tag.
To delve into more options this change could give, we look at the PLC. At the moment, this tag is justified due to the options the game offers. But there are countless possibilities of big unions in game. England-France being a often seen example. Making appearance dynamic, every possible union would be able to be represented on the map with a unique flag, colour and name.
Another option would be dynamic name switches according to dynasty. Why are Ottomans called Ottomans when the dynasty has been dead for a hundred years? I've often seen it. You could fix it by generalizing every country into names like "Turkish Empire", but where's the fun in that? Customization and options are awesome.
Modders would also be happy with a feature like this. Outside the vanilla timeframe there's plenty of examples of countries that have changed significantly but aren't worth their own tag. Persian satraps being Hellenized are an example. A simple dynamic name change would probably do the trick already.
