What is the difference of a person dying due to natural causes and someone dying to "poor health"? The person in my dynasty that died of poor health had no illness or any other modifiers that would cause death, so shouldn't it have been of natural causes?

Isn´t it just the age threshold that makes the difference here? Dying of poor health means you died "naturally" before turning 50, doesn´t it?

Dying "of poor health" just means the character had a below average health (average is about 5.0 I think) and failed a check. Characters with the "Weak" congenital trait tend to die "of poor physique." There is probably a check that occurs and if the base health is below a certain threshold, it returns "of poor health" as the reason. Similarly, some specific traits (illness, stress, maimed, pneumonic) have specific checks when, if failed, return a more specific cause of death.

You can see a character's current health (base, modified by traits) by typing "charinfo 1" in the console and hovering the mouse pointer over that character's portrait.

Anyone can die of natural causes, but the chance grows with age. This is from the defines.lua:
Code:
NATURAL_DEATH_CHANCE_AGE_0 = 5,           -- Natural deaths per decade out of 10000 people: Age 0-9
NATURAL_DEATH_CHANCE_AGE_10 = 1,          -- Natural deaths per decade out of 10000 people: Age 10-19
NATURAL_DEATH_CHANCE_AGE_20 = 15,         -- Natural deaths per decade out of 10000 people: Age 20-29
NATURAL_DEATH_CHANCE_AGE_30 = 20,         -- Natural deaths per decade out of 10000 people: Age 30-39
NATURAL_DEATH_CHANCE_AGE_40 = 51,         -- Natural deaths per decade out of 10000 people: Age 40-49
NATURAL_DEATH_CHANCE_AGE_50 = 100,        -- Natural deaths per decade out of 10000 people: Age 50-59
NATURAL_DEATH_CHANCE_AGE_60 = 400,        -- Natural deaths per decade out of 10000 people: Age 60-69
NATURAL_DEATH_CHANCE_AGE_70 = 1400,       -- Natural deaths per decade out of 10000 people: Age 70-79
NATURAL_DEATH_CHANCE_AGE_80 = 3500,       -- Natural deaths per decade out of 10000 people: Age 80-90
NATURAL_DEATH_CHANCE_AGE_90 = 7000,       -- Natural deaths per decade out of 10000 people: Age 90-99
NATURAL_DEATH_CHANCE_AGE_100 = 9000,      -- Natural deaths per decade out of 10000 people: Age 100+

I had a character die without warning or sign of illness just yesterday, due to "poor health", and he was strong with 8.5 health at the time. Had literally just started the game and was thrown into a 16 year regency completely unexpectedly. I was taken aback at first, thinking I must have been murdered.

There are some parameters in defines.lua that seem to cover this. This cause of death seems to be based entirely on RNG. I suppose it "simulates" people who appear healthy, who suddenly drop dead from an unknown heart condition, etc.

According to the defines.lua, children age 0-9 are five times more likely to die a "natural death" than 10-19 year olds. Without knowing your character's age at time of death, I'd just have to say you got unlucky.
