Playing as the UK if I was to use agencs to create a non aggression pact and possibly military access, could I pop a few divisions around Danzig? Has anyone tried this? Also, if I did that, and it worked and I held the Polish frontline, would the Soviet Union still attack like they used to, once the Molotov pact was broken?

The Soviet Union will attack Poland way before M-R Pact being broken, putting the Allies at war with the Soviets. If Germany can't defeat Poland, the USSR will always end attacking Poland itself.

You should be able to do that without military access once Poland is in your faction. Beware though. If Denmark is lost, your naval route will be cut and any troops/navy in the Baltic will be cut off.

Another, safer, way to help Poland is to deploy the RAF there. They can do quite a bit of damage to the German military if you can dominate the skies, which will make things easier for you and France later.

Yes, USSR still attacks Poland. In the same game where Donitz sunk the Royal Navy, I did the MR Pact late, and USSR attacked Poland almost immediately after I attacked it. They could've just waited a couple of weeks and not gotten into the war with the Allies, but that's AI for you.

The same thing happened to me this week, except I was a Balkan country (can't remember which one). Historical AI, Germany did DoW late and the SU almost immediately attacked as well. It really messed with my plan as the Allies were now at war with both the Axis and the Comintern.

I personally think that the Soviets should not attack unless Poland is losing. If it manages to hold and is part of the allies then Soviets should be discouraged from attacking them.

Really, I think they should make a couple more events to represent the joint Soviet-German invasion of Poland. Historically, the Allies were pretty clear with the Poles their guarantee was only directed at Germany and did not extend to the Soviets (this wasn't released publicly of course, but was mad clear in their treaties). A key factor in the speed of Poland's defeat was also that they still had to keep a fair bit of their army guarding and then engaged on their Eastern border. It also doesn't model the losses both the Poles and Soviets took in this fighting.

Right now, Germany just defeats Poland on their own and then hands over the Soviet portions. The reverse happens if the Soviets attack Poland first. This is an okay way to model it given the limitations of the game, but I wonder if we could instead model it better with a bit of jerry-rigging existing game mechanics. This could be done with either border conflicts and/or events where the Soviets and Poles decide how much to commit to the invasion and then receive losses accordingly (obviously either way with the option to escalate to war instead of accepting the losses as part of a "fighting retreat").

If it were events like the way the game initially modelled the Chinese Civil War clashes between Chiang and Mao.
