The doctrines will grant you slow and sure progress in the main focus area. So assault focus techs will generally advance you in that field and so on. Granted, they are a bit generic, but are meant that way.

why should i stick to one? And not research in all directions?
You can do so, but usually your tech teams will allow for easier progress in a few directions only. Researching other doctrines takes really long, but is doable.
