Creating client states is useful for throwing newly conquered territories into a "vassal" to deflect OE, and sorties can be comical when the AI keeps shipping its armies in one or two at a time, apparently unable to learn that they gon' die.

Almost the same. Mothballing is kind of game changer for me. I have tons of heavies every game in AOW even as non-maritime nation. I did use sorties for giggles. However, I once tried to attack the equal force, got defeated and lost -42% siege immediately. Lesson learned. Never sortie again.
3) Setting a vassal's war assistance mode. Do that quite often when low on manpower/forcelimit.

I am huge fanboy of client states and sorties.

1) Selling ships to someone - Never use

Potentially useful. As Ottomans I was allied with France which usually lost its fleets while fighting England alone and later had nothing to fight our common wars with Spain :D So I gave them powerful fleet and quickly rebuilt my own and voila, next war went much better.

2) Creating a client state - Never use

Extremely cool fun option. Practically speaking: may be very useful while dealing with particular problematic areas.

3) Setting a vassal's war assistance mode - Never use

Well, this one is a big mistake as vassals actually behave and impact your wars in the way you set this one.

4) DoW in support for rebels - Never use

I am not sure how this one works.

5) Sortie from sieges - Never use

Very useful if you have big forts, enemy is carpet sieging or two armies are very equal and you need every soldier you can find. I love it.

6) Mothballing fleets - Always
7) Army template - Always
8) Province siege objective for allies - Often
9) Swapping occupation - Always
10) Designating as marches - Often

1. Never. (Will the AI even buy ships from the player?)
2. Not yet, but probably will
3. I forgot this was an option
4. Not yet. Will definitely use.
5. Not yet, keep forgetting I could when attacking someone besieging my fortresses with my army.
6. Not yet. By the time this mattered, keeping my fleets at full performance wasn't a burden financially.
7. Haven't really explored, probably won't.
8. Tried. My vassals keep ignoring them.
9. Often
10. Never. The inability to diplo-annex makes it useless to me, and the 60BT limit is obnoxious.

What a stupid assumption. You can't hate useful feature just because you made very stupid thing with it - although I also did it few times :D

Use sorties when

1) Sortie outnumbers enemy
2) Sortie doesn't outnumber enemy but your soldiers are better, as sortie soldiers are the same as your regular standing army.
3) When you can help sortie
4) Eventually: deliberately send sorties on suicide attacks just to waste enemy manpower/morale. Yes, I was desperate enough to use it few times.
5) Use sorties when a province has awful terrain like mountains, because enemy will receive penalty in this case. However penalty switches on you if you join the battle with outside forces. Makes sense for me.

6) Use sorties if in a province there is powerful enemy army and you have powerful army next to it but you are not sure about the result of battle and every soldier is valuable. Saved me few important battles. Warning: you have to time sortie properly, I usually do it few days before main army arrival.

The rebels have to start a rebelion, thats when You get the CB, and in the peacedeal You can enforce their demands

If rebels already have started the rebellion can I support them and get CB? This is my problem because supporting rebels while timing 'when they will finally revolt so I can go into war' is awful :D

So far i have not been impressed by marches, they gein a boost to their military capability, but aparantly that just means they're more likely to revolt against you from the boost given. I'd love the ability to have my vassals be able keep their income for themselves, but not too happy about using marches. It's especialy annoying if you're a low-tech country who's westernized who has low-tech vassals, once they revolt, they cannot return to being your vassals again.

Selling ships: Nope
Client state: Considered it when getting into the maghreb, but ultimately just chewed up the ADM
Vassal war assistance: Sometimes, it helps to have my marches do all the sieging while I stack hunt
DOW for rebels: Nope, haven't caused it to happen
Sortie: Literally never witnessed and never seen a reason to use on AI
Mothball: Yes
Army template: I damn near bought the DLC entirely FOR this convenience
Swap occupation: Yes
Marches: Yes, see vassal WA settings, but that was only when I was able to diplo-vassalize people in a direction I didn't want to expand in.

Client states can be very useful in some cases. In my game, Austria managed to annex Hungary early on in a PU. It already had converted all the hungarian provinces to austrian culture in the 1600s. Without its culture, Hungary also lost its cores (the same was the case for Ex-Croatia). Needless to say that it was quite handy to give all these lands to a new, artificial, austrian nation on the ground of old Hungary, when I wasn't interested in these lands at all.

1) Never. I think the few instances I'd use it (in multiplayer particularly), I've been asked to ship troops around for people instead. Which is fine, because I'm the naval power in my multiplayer game.
2) Never, because diplo 22 is too late in the game, and diplo points are better spent annexing other vassals.
3) Never. The AI doesn't listen to it anyways.
4) So far, I haven't, but this actually seems useful. I'm sure I'll start using it once I get in the habit of remembering that funding rebels is actually worth it now.
5) Never.
6) I can make a case for it, but I haven't used it yet. Mildly more useful than the previous points, but, like rebel CB, something I haven't used yet.
7) More useful than I thought they'd be. I like them.
8) Never. The AI doesn't listen to it anyways.
9) Borderline overpowered mechanic and simplifies war in general. Wonderful feature.
10) I haven't made a march yet (60 BT limit automatically kills my interest for making one), but I have done the inverse and played as a vassal and requested to be made a march. That was cool.

1) Selling ships to someone - Never use
Sometimes - you sell your old ships to AI and build new ones. Gives you a net profit.
But with the money imbalance anything money related is kinda of a waste. Loan interest, buildings, etc...

2) Creating a client state - Never use
Honestly haven't gotten that far yet. But I probably wouldn't not because vassal feeding is the same thing.

3) Setting a vassal's war assistance mode - Never use
Um, ya. This is one of the best features even if it is kinda bugged.
My favorite is tell my vassals to siege while I just hunt the enemy down. Saves me manpower, war exhaustion, etc...

4) DoW in support for rebels - Never use
I think its bugged, haven't tried it much.

5) Sortie from sieges - Never use
Not yet, AI seems to siege en mass.

6) Mothballing fleets - Always
Oh most certainly. Although in multiplayer england I'm usually fearful of invasion so I keep my fleet up until burugndy is dead.

7) Army template - Always
Nope, it crahses the game in multiplayer.

8) Province siege objective for allies - Often
It worked the first few days. Then it stopped working. Bugged.

9) Swapping occupation - Always
Of course, most broken thing in the game. HRE united by 1460!

) Designating as marches - Often
Very useful.
