As others have said already, it often feels like I build mining stations because of OCD rather than for the purpose of getting any material benefit in-game.

Got bored and counted my mining stations late game. Had about 100 energy dedicated to ~200 in mining stations. Absolutely not worth it I'm thinking.

My logic: You could dedicate a big planet to mines (20 level 4 mines giving +100 in minerals and at a cost of 50 energy.

EDIT:

Buuut ....that extra planet incurs a research penalty of about 30% so yeah....I kinda just defeated my own argument there (it's subjective really...30% research penalty vs 50 energy)

There's no reason to not build mining stations everywhere as long as you have the creds to maintain them.
Except maybe in early game. If you want to optimize your production, it's probably better to build mineral stations as they are found, energy stations when you starting lacking energy, and science stations that provide the biggest bonus first.
If you find an enclave early in the game, it can also change your priorities (for example, with the merchant enclave it's better to build every energy station you can).

In mid/late game, just build everything you can. Even if it's just a +1 station, it can mean that there's a stratetic ressource on it, so you won't miss it when it pops after researching the right technology.

I tend to replace a lot of mineral/energy producing buildings by unique or tech buildings on my planets in late game, because my economy don't need them at this point (especially minerals) - that is, just after the big need of energy you generally have once you can build large fleets but don't have the techs to optimize your maintenance / energy production yet is resolved. I keep maybe one or two energy planets.
Of course it also depends on the galactic situation, but generally I already control at least 30% of the galaxy at this point and I already killed one fallen empire (and of course I keep all of their shiny buildings).

If you have a decently sized empire that penalty will be very minor. If you already have a 5.5x multiplier on your research, researching 5% more slowly might be...

Eh, it's just fifty energy.

When I play a democratic government, I always hold off on research stations so I can fulfill campaign promises to get the influence boost. Though one thing I learned in my latest game, if you don't mind taking advantage of the mechanic a bit, you can purposely have 4 research or mining stations open to be built, and build them after an election to fulfill the campaign promise, then destroy those stations before the next election. This way, you will always be able to fulfill your campaign promise, and just like in real life, your politicians are actually just gaming the sheeple in your empire with empty campaign promises that they are fulfilling to the letter of the law, but not the spirit. This of course assumes you are at a point in the game where your economy doesn't care about rebuilding 4 stations over and over every election.

I will mine every energy node in the galaxy, and +3 science or more, and a few strategic resources; after that i don't use stations' they are really inefficient. Energy is basically the most valuable resource in stellaris. it starts out about the same as minerals (a tad less at the very start) but just becomes more and more valuable as the game progresses.

The energy cap is also pretty friggin ridiculous all things considered. I can't understand the design decision that leads to purposely having to produce 1/5 of your entire resource cap per month just to keep your entire empire from falling into pieces if you move your fleet an inch out of orbit.

Not really. A planet with 1 capital, 1 hospital, 1 power hub and 7 power plants shall produce more than 50epm. That planet induces 20% tech cost penalty.
