Yes, they do. I've explained this like 5 times in different places since Industries came out (including in Biffa's comment section). Industry demand isn't some complicated calculation based on a variety of needs. There is only one factor that affects industry demand. That is unemployment. If you have a lot of unemployed people, you have industry demand. It is that simple. The new industry takes up industry demand because it employs people.

Or high ed workers being slow to take up the low ed slots. Some of the buildings with a lot of slots take quite a while to fill when you have mostly high ed citizens. Also the demand bar is based on current employment percentages not potential employment. So if workers are dragging their feet to take a job or can't because the job is too high ed it'll say you need more industry.Not enough educated workers for the new buildings perhaps.
They do not travel between industry areas. Only to and from them. Hitting multiple spots in an industry area is good so more people are willing to take the mass transit but they won't travel between those spots.It seems like bus routes around the industrial zone never get used while routes into it do.
I'm not sure whether I have seen anyone go there physically yet. Nobody seems to drive their car there, either, even if there's no public transport. I need some closer observation though to be sure.Also where do the workers go physically? Is it just to the main building or everywhere?
