I'm only against day one DLC when it involves a core part of the game, such as Mass Effect 3's companion and Metro's difficulty level DLCs. The DLC Paradox is offering is mostly all cosmetic or extra details to specific cultures/nations. Some people don't want that stuff. The Purple Phoenix DLC is only for the Byzantines who are almost extinct at the game start. Some players will never play as them so what's the point in them getting the extra stuff for the Byzantines? Plus the game has been said that it's mostly done and it's only balancing and bug fixing at the moment. This DLC is extra stuff that they thought of afterwards and is only being done because it give their event coders and artists something to do.
I don't mind as I intend to get it all, for free too with the sing-up and pre-order. I was also more than happy to pay the extra for the deluxe edition.

Please notice, Paradox games are also a lot cheaper than many 'big' releases.

Compare this with Rome II: Total War which I bought for £26 and I still get all the day 1 DLC nonsense and a physical copy.
Actually EUIV isn't cheap at all, it's £35 for the cut edition or £40 for the full game in the UK. It's probably the most expensive PC game I've bought in years and it's not even a physical copy, I don't get a case or instruction booklet or anything. Compare this with Rome II: Total War which I bought for £26 and I still get all the day 1 DLC nonsense and a physical copy.

What the...? I don't want to derail, but how the hell did you get Rome 2: TW for 26 pounds? It's 55 euros for me. Has euro collapsed while I was asleep or what?
Well since I am not used to dlc
If you dont buy DLC's
1. game mechanics, playable countries and generally any important aspects will be missing?
2. you will have problem playing game online? (only with same dlc people will play together?)
The DLCs so far are all either just cosmetic stuff or flavor events.
