I managed to convert Aragon to orthodox. But Im having problems when it comes to setting my culture to greek. I need my provinces to be >50% greek but to meet that requirement I have to get rid of my iberian provinces and that cripples my empire from the anatolia region to the west.

Is there a better way to shift to greek culture without losing their genuine aragonese lands?

You can also culture convert your provinces. Southern Italy can be converted directly and then you chain-convert through the Mediterranean (Southern Italy -> Sardinia -> Baleares -> Aragon).
