Did something changed in the education system (this non-conclave one)? My son is 16 and he didn't get any education trait, is it a feature or a bug?

Yeah it's a know bug of the latest patch.
Currently, education is broken if you don't own/use Conclave.
The devs are working on it, it will probably be solved in the first hotfix.

If you're not reluctant to use the console, you can always give your children an education trait yourself with "add_trait <trait>".
Alternatively, you can roll back to the previous patch version and everything should play as it was. It won't have any of the other bug fixes, but at least it means you can play until the hotfix.
