I could be wrong, but will life expectancy and death play a larger role in this DLC?
First, We have diseases, which people can die from.
Will women and babies die from pregnancy/birth too?
What about the bubonic plague (Black Death) and how will the mechanism work?
Does this mean the life expectancy of our characters be shorter due to lack of modern day medicals?
I could be wrong, but will life expectancy and death play a larger role in this DLC?

Dang it. While this DD sounds great, I really would have hoped for the ability to influence the outcomes more, if the player is a court physician. The same with councillors (The spymaster always has to report plots? No choice there), but it wasn't really improved with Conclave. I do look forward to this and hopefully you might improve it in the future to involve the physician and the councillors more

I would assume food poisoning is something you can get cured of easily without treatment if your health is high enough.

Sorry, I died enough by being stressed already. Turned sixteen, focused on Reign ( to train skill ), accquire stressed at 17, die at 19. Rinse and repeat.
If we rehaul the sickness concept then also go for "Stressed" and "Depressed". It starts minor ( just as the new sicknesses do ) and only the final stage can be fatal. Not just get stressed, die two years later because it says so.

With a larger focus on health related events and problems, will we finally be able to see our own health number in the interface? It's something I've felt was lacking since day 1.

This is both hilarious and horrifying at the same time. Imagine the hordes of players trying to actively get their character as sick as possible and letting some illiterate dung-shoveler try his most experimental "cures" on the poor king/queen just to see the results.
